Drop moldy tofu into Grandma’s glass jar, one piece at a time: drag left and right to aim, let go to drop. Two alike that touch merge into one older piece, from fresh tofu to fluffy, wine-soaked and chili-coated, all the way to heirloom mold. Small pieces left alone grow fuzz and age by themselves; now and then Grandma hands you a pinch of salt, a spoon of rice wine or a handful of chili powder, which ages a piece one step when it lands on the right one. When the ninety seconds are up, or the jar stays over the rim too long, Grandma puts the lid on. Moldy tofu is Taiwanese fermented bean curd, and this is the third game of the Moldy Tofu Simulator series.
